Santa Maria Novella was founded in 1221 by Dominican friars in Florence, Italy. They began as a pharmacy using plants and botanicals as herbal remedies eventually transitioning to renowned perfumes. It officially opened to the public in 1612, gaining fame for scents like Acqua della Regina (1533) created for Catherine de’ Medici.
